Structural and Chemical Characterization of Indigenous Millet Starch Varieties

Abstract

Millets are a set of small grains that belongs to the Poaceae family. The present study employs microscopy and spectroscopy tools to analyze the physicochemical characteristics of starch extracted from Indian millets.
